Lime oil has a bit of natural sweetness in it; that’s why a teaspoon of fresh lime zest is used in this sorbet recipe. Try this for a light dessert or palate cleanser between courses.

fresh lime juice

teaspoon lime zest
Ingredients:
In medium saucepan over medium
heat, bring the water, sugar, and lime juice to a simmer. Cover the
pan, lower the heat slightly, and cook for about 3 minutes, until
the sugar is dissolved. Remove from the heat and cool the mixture
to room temperature. Stir in the lime zest. Chill the mixture for 2
hours. Freeze in an ice cream maker according to the manufacturer’s
instructions.
I don’t have an ice cream maker!
Don’t be afraid if you don’t have an electric ice cream maker, you
can still make some delicious sorbet. All you need to do is
place your mix in a rectangular cake pan and freeze. Every
half an hour or so you’ll need to scrape the ice with a fork, but
eventually you’ll get to the point where you have some nice flaky
lime ice. It won’t be the same as using an ice cream maker,
but its pretty close.
